It was a sign. BOTH of my colleagues were eating Eggplant Parmesan for lunch the other day. I know I’m now in the NorthEast where there is a HEAVY Italian influence, but let me just say – my Midwestern roots did not expose me to “Eggplant Parmesan”. I could totally school them in Pork Tenderloin, Biscuits & Gravy, and all things comfort food…but the art of Italian cooking is lost on me. Or so I thought.
Now, one of my colleagues had the “authentic” variety. Buttermilk, breading, fried eggplant. No sauce. Just the beauty of the eggplant.
The other colleague made more of a lasagna-esque casserole. Definitely more my style. I’m a sucker for all types of cheeses, basil, pasta sauce, and add some veggies to pretend it’s healthy.
And here’s where it gets better!!! I found a “healthy” eggplant parm recipe!!! It theoretically cuts the calories from 1,053 per serving to 318 calories! Plus, I pretty much owned all the ingredients which is always a plus. I bought my eggplant at the local farmer’s market for $1, and spent maybe $5 on everything else. AND, it made enough for a whole week of leftovers (whoops…).
I think it’s important to try and spice up your life – whether it’s restaurants you visit, clothes you wear, makeup you try, or recipes you cook…it’s always fun to try something new! So try out this recipe (you can always half it!) with a glass of red wine, some garlic bread – and a cannoli for dessert if you’re feeling really adventurous!
