Easy Chicken Gyros


On my quest to healthier eating, I needed a way to sneak in more veggies without it always being a salad. I have always loved ethnic food, and have a special place in my heart for Mediterranean/Greek food, but have never made it at home.

One of my favorite go-to meals at a Greek restaurant is a chicken gyro. I specifically love the pita and the tzatziki sauce. Given the whole point of this was to add more veggies AND help me keep my calories in check, I opted for a low cal whole wheat pita (not as good as the real thing, but works anyway). And instead of buying tzatziki sauce I made it at home!

It was all surprisingly easy to make, but wanted to share a few tips:

*To speed up the prep time – use the Tyson grilled and ready chicken strips! They were a game changer in my household

*An English cucumber is a seedless cucumber – they’re really long and skinny (let’s just say I was searching & searching the grocery store and ended up having to Google it…

*I, like some of the other users of this recipe, found the sauce to be too runny. The key is squeezing out any excess water in your cucumber…and adding a little more Greek yogurt.

*I used a food processor – they’re my favorite and much better than blenders!
