S’mores Cupcakes

It’s custom that every few weeks I ask Kyle to scroll through my Pinterest page and pick one or two things he wants me to make. Ranging from healthy dinners to tasty treats, it’s always fun to try new recipes. Since I’ve been on a health kick lately, I reserve my baked goods for his office friends (and occasionally take a quick bite just to check it out…). This weekend, Kyle found a recipe from Pastry Affair: S’mores Cupcakes.

I must admit this was a pretty intense recipe. These cupcakes have four layers…yep, four layers. And I even took the easy way out to use a boxed cupcake mix.

The first step is to make a graham cracker crust…you can either buy graham cracker crumbs or make them yourself in the food processor (my choice). Mix it with a little sugar & butter, bake it for about 5 minutes in a 350 degree oven and you have a pretty good crust for the base of these cupcakes.

Next step is adding the cupcake mix. That takes about 18 minutes in the oven…and altogether is pretty straightforward.

The next two steps get a little tricky.

The first is to create a chocolate glaze for the cupcakes (YUMMMMM). You just melt 4oz semi-sweet chocolate (I used chocolate chips), butter & a little bit of corn syrup on the stove. Let it cool…but not harden. That was my mistake. I waited too long (life happens…). If this happens to you, just reheat on the stove!

TIP: Once it’s relatively cool, I went the easy route and dipped the cupcakes in the chocolate sauce. It’s a little messy, but super easy & fast!

The final step is create the marshmallow frosting. This was a pretty intimidating step, but ended up being super easy. Use a double boiler and whisk together 4 egg whites & 1 cup of sugar for about 3-4 minutes. Once the sugar dissolves, move the mixture into your mixer and whisk an additional 8 minutes until you get soft peaks.

TIP: If you don’t own a double boiler, just put a glass bowl over a saucepan like I did!

Once you top the cupcakes, you can use a kitchen torch to toast the marshmallows. I let Kyle do this part since he loves playing with fire. This is a crucial step to making a chocolate marshmallow cupcake a S’MORES cupcake!! We searched EVERYWHERE for more butane, and I’m embarrassed to admit we had to go to a smoke shop to get it…Yep, grocery stores might not carry it but your local smoke shop will…

These are SOO cute, and taste great! It’s pretty labor intensive, but overall worth it! Looking for more recipes that require fire!!

  • Yum… I can’t remember if I told you, but our current house sit doesn’t have a working oven (total bummer when we discovered that! ha) and I have been deeply craving a fresh baked cookie. Or s’mores cupcake. Or any baked good! I finally resorted to no-bake cookies and have purchased all my ingredients. Just need to whip them up now!
